New publication on the correct heating of oils

Congratulations to Elisabeth Koch for her recent publication in the Journal of Agricultural and Food Chemistry!

How often can a frying oil be reused? This is one of the questions Prof. Dr. Nils Helge Schebb's group is trying to answer. The team proposed potential new markers for evaluating the heating of vegetable oils. In the future, these markers could help to determine the quality of frying oils and the maximum number of frying cycles of an oil. Check it out here.
